my husband didn't notice...

...that the millet pilaf I served him last night had cauliflower in it!  This is a great way to get a cruciferous vegetable into your diet, that is very tasty!

Millet pilaf with hidden cauliflower

2 cups cauliflower, chopped finely
2 tablespoons olive oil
1 cup millet
3 cups water

Saute the cauliflower in the oil until tender.  Add the millet and water, and bring to a boil.  Cover and cook on low for 25 minutes.

I've spoken before about the benefits of millet for fibroid shrinkers: lots of protein, gluten free, not acid forming, contains lignans.  Great substitute for mashed potatoes or pasta or rice or couscous in dishes that have sauce.

Check the data on millet - it seems to be very inflammatory and high in carbs:

Thanks much, very interesting. Boy, sometimes it feels like you can't win.

Actually have been cutting back on the carbs lately...
