Cod Livornese

Here's a great recipe for a fibroid-friendly dinner, Cod Livornese. I made a couple of adjustments: I used a half-pint of cherry tomatoes and then a half jar of sun dried tomatoes. Used twice the kalamata olives called for. To save time, I cooked the tomatoe and olive topping in a separate pan from the fish, simultaneously.

Paired with lightly stir-fried arugula leaves, it was a quick and delicious dinner.
